Easy Everything Salad

I almost titled this “wishing it were summer salad” because that exactly what i’m doing though making this - wishing it were summer…in January.

Don’t be too strict with this, its a great “use what you have” type of salad, but i’ll give you the bones on how to make & you can run with it. This is a perfect way to use up any fresh fruits, veggies, proteins you have left at the end of the week in your fridge.

Easy Everything Salad

Ingredients:

  • 2 hearts romaine, chopped

  • 2 large handfuls of spring mix, chopped

  • 1/2 cup cherry tomatoes, halved

  • hard boiled eggs (as many as you need for your family)

  • crumbled feta or sharp cheddar (truly use what you have on hand!)

  • half English cucumber, chopped

  • 1/2 cup hard salami sliced into strips

  • 1 apple, chopped

  • 2 chicken breasts, sliced in half to thin

  • 1 tbsp olive oil

  • 1/4 cup walnuts, chopped

  • 5 green onions, chopped (red works too)

  • croutons

  • avocado lime dressing

  • salt + pepper

Instructions:

1. Begin by chopping your lettuces & storing in a large bowl, set aside in fridge to stay crisp.
2. Heat olive oil in large pan on stove over medium heat, meanwhile season thinned chicken breasts as desired.
3. While chicken is cooking, begin boiling eggs if not already hard boiled.
4. Flip chicken in pan after a few minutes & continue cooking until cooked through reaching 156 degrees F.
5. Finish chopping remaining toppings for salad - cucumbers, tomatoes, apple, green onion, salami, & crumble feta cheese.
6. Once cooled slightly, chop chicken into bite size chunks.
7. Begin assembling salads starting with lettuce mixture, your choice of toppings, proteins, & top with your dressing.
8. We like to serve these with a side of garlic ciabatta toast.

Enjoy with good company.

A few things to note
  • One of the keys to a good salad is to chop everything including the lettuces small. We don’t want to be chewing for an hour y’all. Just chop it nice & small.

  • I grab a cleaner store bought dressing (in the refrigerated area at Aldi is my fav) for simplicity, however, you can add any dressing you like or make your own!
